Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

  • 80g fruits of forest berries, fresh or frozen
  • 40g pitted Medjool dates, finely chopped
  • 1 tablespoon water
  • 30g skimmed milk powder
  • 1/4 teaspoon xanthan gum
  • 170ml single cream
  • 180ml whole milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon berry extract

Utensils

  • Medium Microwavable Safe Bowl
  • Fine Sieve
  • Whisk
  • Large bowl
  • Silicone Tipped Spatula
  • Scale
  • Step 1

    In a medium microwave safe bowl, add fruits of forest berries, dates and water. Microwave the mixture until soft OR add to a saucepan over a medium heat, stirring occasionally and mash the fruit to release juices. Once simmering, remove from heat and set aside to cool.  

  • Step 2

    In a large microwave safe bowl, add skimmed milk powder and xanthan gum. Slowly add cream and mix to combine. Then add milk, both extracts and softened berry mixture and stir until combined.  

  • Step 3

    Microwave the mixture for 45 seconds. Remove from microwave and whisk until fully combined. Make sure the tub base is in the closed position. Pour mixture into an empty Swirl Tub. Place storage lid on tub and freeze for 24 hours. 

  • Step 4

    Remove tub from freezer and remove lid from tub. Install Swirl Tub into outer bowl and cover with processing lid, placing so the lines on the lid and handle align, turn clockwise until you hear a click.   

  • Step 5

    Select SOFT SERVE then select LITE ICE CREAM. 

  • Step 6

    When processing is complete, dispense into a chilled bowl or cone and serve immediately.
