Vegetable & Borlotti Bean Soup

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

  • 1 tbsp olive oil or coconut oil
  • 1 large onion, roughly chopped
  • 2 large cloves of garlic, peeled and roughly chopped
  • 1 large leek, roughly chopped
  • 1 large carrot, roughly chopped
  • 2 sticks of celery, roughly chopped
  • 3 sprigs of rosemary
  • 2 x 400g tins of chopped tomatoes
  • 1 x 400g tin of borlotti beans
  • 700ml hot vegetable stock
  • A pinch of chilli flakes
  • 200g baby spinach
  • Optional grated parmesan for non-vegan
  • salt and pepper

Utensils

  • Step 1

    Place olive oil, onion, garlic, leek, carrot and celery in blender jug.

  • Step 2

    Select pre-cook CHOP. 

  • Step 3

    Select pre-cook SAUTÉ.

  • Step 4

    Add rosemary, tomatoes, borlotti beans, chilli flakes and vegetable stock. 

  • Step 5

    Select CHUNKY SOUP. With 5-10 minutes remaining in program, add spinach and season with salt and pepper.

  • Step 6

    Serve with crusty bread, and optional grated parmesan.
