Gluten-Free Bread & Butter Pudding
Made with warming autumnal spices and dried fruits, this delicious Gluten-Free Bread and Butter Pudding is perfect comfort food for any time of the year.

Cooking mode

- 250g gluten-free bread (8-10 slices)
- 110g butter, softened
- 100g coconut sugar
- 2 tsp ground sweet cinnamon
- 60g dried fruit
- 1 tbsp candied peel (optional)
- 2 eggs
- 375ml organic full fat milk
- 30ml double or whipping cream
- 1 Zest of orange
- 1/2 tsp sea salt
- Few gratings nutmeg

Step 1
Grease the base of the cooking pot and about an inch up to the sides.

Butter the slices of bread and cut into triangles. Stir together the coconut sugar and cinnamon then stir in the dried fruit and candied peel (if using).

Place a slice of bread into the cooking pot then sprinkle over the sugar and fruit mix, layer another piece of bread and sprinkle again. Repeat until all of the bread has been layered and sprinkle over any remaining sugar and dried fruit.

Whisk together the egg, milk, cream, orange zest, sea salt and nutmeg then pour over bread. Using the back of a spoon press down the bread firmly and leave for 10 minutes to absorb the liquid.

Close the lid and slide the SmartSlider to AIR FRY/HOB, select BAKE/ROAST and set the temperature to 160c and time to 25 minutes. Select START/STOP.

Once cooking is complete open the lid and leave to cool for 5 minutes before serving.
