Dark Chocolate & Passion Fruit Sorbet
NOTE: You can buy premade passionfruit vodka martini from the supermarket. Swap for an alcohol-free version or passion fruit juice if you don’t want to use alcohol.

- 200ml water
- 75g caster sugar
- 30g cocoa powder
- 85g dark chocolate or dark chocolate chips, finely chopped
- Pinch salt
- 75ml passion fruit martini
Utensils

Step 1
Place water, sugar, cocoa powder, chocolate and salt in a medium saucepan over a medium heat. Cook, stirring frequently with a silicone spatula until the sugar has dissolved and the chocolate has melted. Remove from the heat and leave to cool.

Once cooled, stir in the passionfruit martini then pour into the tub. Place storage lid on tub and freeze for 24 hours.

Remove tub from freezer and remove lid from tub. Place tub in outer bowl, install paddle onto outer bowl lid, and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.

Select SORBET.

Select RE-SPIN to process the mixture a little more and achieve a creamier result.

Once processing is complete, add mix-ins or remove sorbet from tub and serve immediately.
