Banana, Peanut Butter & Biscoff Cakes

Cooking mode

  • 2 bananas
  • 3 tbsp Biscoff spread
  • 1 egg
  • 150ml oat milk
  • 1 tsp vanilla extract
  • 100g gluten-free flour
  • 100g ground almonds or almond flour
  • 100g coconut sugar
  • 1 tsp cinnamon

For the decoration

  • 1 tbsp smooth peanut butter
  • 3 tbsp icing sugar
  • 1-2 tbsp oat milk
  • Biscoff biscuits, crumbled

Utensils

  • Step 1

    Place the bananas, Biscoff spread, egg, milk and vanilla into your Ninja Kitchen food processor and whizz up until smooth.

  • Step 2

    Add in the flour, almonds, sugar and cinnamon and whizz up again until you have a nice thick batter.

  • Step 3

    Spoon between 6-8 small silicone molds to fill to the top, then bake at 180C for 20 minutes until risen and golden. Leave to cool, then pop out onto a wire rack.

  • Step 4

    Whisk together the nut butter, icing sugar and enough oat milk to make a slightly runny mixture, Drizzle over each cake then sprinkle over some chopped nuts and Biscoff crumbs. Enjoy!
