Blueberry Jam and Dark Chocolate Cookies

A super delicious buttery cookie recipe, stuffed with a sweet blueberry jam with added pieces of dark chocolate that melts throughout the cookies, the cookies are sprinkled with sea salt flakes. This recipe makes approximately 10-12 cookies.

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

  • 150g unsalted butter (room temperature)
  • 120g light brown sugar
  • 80g white sugar
  • 230g plain flour
  • 4 egg yolks
  • 1 tsp bicarbonate of soda
  • 200g dark chocolate piece
  • 10-12 tbsp frozen blueberry jam
  • Sea salt flakes (optional)

Utensils

  • Step 1

    Using the bowl of your Ninja Kitchen System and the dough blade, add the light brown sugar, white sugar and butter and select low for approximately 30 seconds mix the butter and sugars.

  • Step 2

    Add the flour, egg yolks and bicarbonate of soda and select low again for 30-60 seconds to mix all of the ingredients together and create the cookie dough. Add the chocolate pieces and select low again for 12-20 seconds to mix the chocolate pieces with the dough.

  • Step 3

    Place the cookie dough in the fridge for approximately 30 minutes.

  • Step 4

    Remove the cookie dough from the fridge, using an ice-cream, scoop the cookie dough into balls, then flatten the cookie dough and place the blueberry jam on top and roll the cookie dough into a ball making sure the blueberry jam is stuffed inside the cookie dough.

  • Step 5

    Set your Ninja Mini Flip oven to bake at 170C degrees (if you are using a regular oven, do make sure, you preheat the oven 15 minutes before), place the cookie dough balls in a baking tray lined with greaseproof paper with a large gap in between each cookie.

  • Step 6

    Place in the oven and bake for 13-15 minutes. Sprinkle with sea salt flakes and enjoy.
