Lotus Loaf
Everyone is simply going to love this Lotus Biscoff recipe. A super delicious vanilla sponge with chunky pieces of Lotus biscuits through the centre, adding a nice crunch in every bite. The loaf is then drizzled in Biscoff spread.

- 150g white sugar
- 150g cake butter
- 50g self-raising flour
- 3 beaten eggs
- 1 tbsp vanilla extract
- 10 XL Lotus biscuits
- 40g smooth Biscoff spread

Step 1
Preheat the oven at 170°F/340°C.

Step 2
Using the bowl of your Ninja Kitchen food processor along with the dough blade, add the white sugar and butter and select low for approximately 10 seconds to combine both ingredients.

Add the vanilla extract, beaten eggs and flour and repeat by selecting low for 10-20 seconds.

Chop 6 of the Biscoff biscuits into pieces and mix gently with the batter using a spoon.

Prepare a loaf tin by covering it with greaseproof paper, pour the cake batter in the tin and place the 4 remaining Lotus biscuits on top of the batter and place in the oven to bake.

Bake for approximately 45-50 minutes.

Pierce the cake to make sure it has bake through and allow it to cool.

Melt the Biscoff spread in the microwave for 20-25 seconds and drizzle over the cake.
