Slow Cooked Lamb with Layered Vegetables

INGREDIENTS
- 600g potatoes, peeled and finely sliced
- 300g sweet potatoes, peeled and finely sliced
- 2 onions, finely sliced
- 3 carrots, sliced
- 2 garlic cloves, crushed
- 2-3 thyme sprigs
- Salt and freshly ground black pepper
- 500ml chicken or vegetable stock
- 1.5kg half shoulder of lamb

Step 1
Preheat the oven to 160°C.

Step 2
Layer vegetables, garlic, thyme and seasoning into the bottom of the Ninja Possible pot. Pour over chicken or vegetable stock. Place lamb on top. Season to taste. Cover with lid.

Step 3
Put pot in the preheated oven. After 1½ hours, carefully remove lid from pot and put pot back in the oven. Cook for another 1½ hours or until lamb is cooked.

Serve hot with green vegetables.
