Zesty Lamb Chops with Feta Cheese Salad

Cooking mode

  • 6-8 lamb chops,trimmed off excess fat
  • Zest and juice of 1 lemon
  • 2 tbsp olive oil
  • 1 tbsp dried oregano
  • 1 tsp dried mint
  • Pinch chilli powder
  • 1 tsp Salt
  • 1/2 tsp pepper

For the feta cheese salad

  • 100g mixed lettuce leaves
  • 150g cucumber
  • 150g ripe tomatoes
  • 1 red onion sliced into rings
  • 100g feta cheese
  • 1-2 tbsp olive oil
  • Fresh parsley
  • To season salt and pepper

Utensils

  • Step 1

    Zest the lemon and add the juice to a bowl, add the olive oil, oregano, mint, salt, pepper and chilli to the bowl. Add the chops to it and mix well. Cover and marinate for 30 mins

  • Step 2

    Preheat the grill with the griddle plate to Max using the grill function. Place the chops and cook for 8-10 mins depending on thickness

  • Step 3

    While the chops are cooking prepare the salad- use a salad bowl to arrange the lettuce leaves, tomatoes , cucumber and onions. Season with salt and drizzle with olive oil

  • Step 4

    Cube the feta cheese and place on top of the salad then sprinkle with fresh parsley and dried oregano

  • Step 5

    Remove the chops from the grill and rest for 5 mins. Serve with the salad and a drizzle of freshly squeezed lemon juice
