Coconut & Lime Loaf

Cooking mode

  • 175g butter, softened, plus extra for greasing
  • 175g caster sugar
  • 3 medium eggs, beaten
  • 175g self-raising flour
  • 1 tsp baking powder
  • 50g desiccated coconut
  • 1 tbsp coconut milk powder, optional
  • Zest and juice of 1 lime
  • 2 tbsp milk of choice

Drizzle

  • Zest and juice of 2 limes
  • 60g granulated sugar
  • 2 tsp desiccated coconut

Utensils

  • Step 1

    Grease a Ninja loaf tin or 23 x 12.5cm loaf tin with butter then line bottom of tin with baking parchment. 

  • Step 2

    In a large bowl, add butter, sugar, eggs, flour, baking powder, coconut, lime zest, juice and milk together. Using a hand mixer, beat together for 1 minute until smooth. Spoon the batter into prepared loaf tin. 

  • Step 3

    Insert both crisper plates into unit. Place loaf tin inside and close drawer. 

  • Step 4

    Select MEGAZONE, select BAKE, set temperature to 160°C and set time to 50 minutes. Press START/STOP to begin cooking. When 25 minutes remain, open drawer and cover loaf tin with foil to prevent over browning. Close drawer to continue cooking. 

  • Step 5

    In small bowl, whisk together lime zest, juice and caster sugar. Whisk until the sugar dissolves. 

  • Step 6

    Cooking is complete when a wooden cocktail stick inserted in the centre of loaf comes out clean.  

  • Step 7

    Once loaf is cooked, use a cocktail stick to prick the top of the loaf and pour over drizzle. Sprinkle over desiccated coconut. Allow to cool in the loaf tin before serving.
