BBQ Chickpea and Halloumi Burgers

Cooking mode

- 400g tinned chickpeas, drained well
- 1 garlic clove, peeled, crushed
- 1 tsp ground cumin
- 1 tsp ground coriander
- 2 tbsp self-raising flour
- 25g flat leaf parsley, chopped
- 25g fresh coriander, chopped
- 3 spring onions, chopped
- Sea salt flakes, as desired
- Ground black pepper, as desired
- 150g halloumi, grated
- 1 tbsp olive oil
- 4 flatbreads
- 125g hummus
- 2 tbsp lemon juice
- 8 little gem lettuce leaves
- 2 large tomatoes, sliced

Step 1
In the base of a food processor, add chickpeas, garlic, ground cumin and coriander, flour, parsley, coriander, onions, salt, and pepper. Pulse until all ingredients are blended well and consistency is coarse. Transfer to cutting board and spread mixture out. Then knead in halloumi. Once halloumi is added to the mixture, shape into 4 flat patties. Use your thumb to make a 1cm indent in the centre of each patty (this will help the burgers keep their shape uniform during cooking). Cover and chill in the fridge for an hour.

To install the grill plate, position it flat on top of the heating element and gently press down until it sits into place, then close the lid.

While holding the smoke box lid open, use the pellet scoop to pour pellets into the smoke box until filled to the top. Then close smoke box lid.

Turn dial to GRILL. Select WOODFIRE FLAVOUR. Set temperature to HI and set time to 10 minutes. Select START/STOP to begin preheating (IGN and preheating will take approx. 11-13 minutes).

While unit is preheating, remove burgers from fridge.

When unit beeps to signify it is preheated and “ADD FOOD” is displayed, open lid, brush burgers with oil and place then onto grill, gently pressing them down to maximize grill marks. Close lid to begin cooking. Check after four minutes and flip when good grill marks are achieved.

Close the lid to continue cooking. After 8 minutes check if burgers are cooked. If burgers are not done, cook for additional 2 minutes.

When cooking is complete, transfer burgers to a warm plate. Add flatbreads to the grill and close lid. Set temperature for 2 minutes. After 1 minute, flip flatbread and cook for additional 1 minute.

When cooking is complete, remove flatbread from grill and place on plate. In a small bowl, add hummus and stir in lemon juice to loosen.

Build burgers with lettuce, sliced tomatoes and hummus. Season and serve with fries as desired.
