This Beetroot and Horseradish Soup is a light and vibrant pink soup. Packed full of nutritious, simple ingredients.

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!
- 2 tbsp Coconut oil
- 1 Red onion (roughly chopped)
- 1 piece Root ginger (peeled, roughly chopped)
- 1 Clove garlic (peeled)
- 350g Beetroot (peeled, cut into 1" chunks)
- 1 Green apple (peeled, cored, quartered)
- 750ml Hot vegan vegetable stock
- 1 tsp Dried thyme
- 1-2 tsp each Grated fresh horseradish or creamed horseradish
- ¼ cup Coconut yoghurt
- To taste Sea salt and freshly ground pepper

Step 1
Place oil, onion, ginger, and garlic into jug, secure lid on jug and select CHOP

Select SAUTE and let the programme run

Add beetroot, apple, vegetable stock, and thyme into the jug, secure lid on jug and select SMOOTH SOUP

When SMOOTH SOUP setting is finished, add the coconut yogurt and horseradish to the jug and pulse briefly to mix. Add salt and pepper to taste and serve
