Beetroot & Horseradish Soup

This Beetroot and Horseradish Soup is a light and vibrant pink soup. Packed full of nutritious, simple ingredients.

Utensils required


  • 2 tbsp Coconut oil
  • 1 Red onion (roughly chopped)
  • 1 piece Root ginger (peeled, roughly chopped)
  • 1 Clove garlic (peeled)
  • 350g Beetroot (peeled, cut into 1" chunks)
  • 1 Green apple (peeled, cored, quartered)
  • 750ml Hot vegan vegetable stock
  • 1 tsp Dried thyme
  • 1-2 tsp each Grated fresh horseradish or creamed horseradish
  • ¼ cup Coconut yoghurt
  • To taste Sea salt and freshly ground pepper

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!


  • Step 1

    Place oil, onion, ginger, and garlic into jug, secure lid on jug and select CHOP

  • Step 2

    Select SAUTE and let the programme run

  • Step 3

    Add beetroot, apple, vegetable stock, and thyme into the jug, secure lid on jug and select SMOOTH SOUP

  • Step 4

    When SMOOTH SOUP setting is finished, add the coconut yogurt and horseradish to the jug and pulse briefly to mix. Add salt and pepper to taste and serve
