Buttermilk Chicken with Cornflake Crust and Sweetcorn Mash

Cooking mode

LEVEL 1 (Combi Pan)

  • 500g Maris Piper potatoes, peeled, cut into 2cm cubes
  • 500g frozen sweetcorn
  • 1 onion, peeled, finely chopped
  • 250ml whole milk
  • 2 tsp sea salt flakes
  • 75g butter
  • 25g grated Parmesan or Pecorino Romano
  • 2 tbsp double cream
  • 2 tbsp fresh chives, chopped
  • Sea salt and pepper, as desired

LEVEL 2 (Bake Tray)

  • 1 1/2 tbsp sea salt flakes
  • 1 1/2 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion granules
  • 2 1/4 tsp black pepper
  • 1 1/2 tsp cayenne pepper
  • 4 x 215g skinless and boneless chicken breasts, cut into strips
  • 250ml buttermilk
  • 200g gluten free plain flour
  • 3 large eggs, whisked
  • 200g cornflakes, crushed
  • Cooking spray, as needed
  • Honey, to drizzle

Utensils

  • Large bowl

  • Silicone potato masher
  • Step 1

    In a medium bowl, combine the sea salt flakes and spices for the chicken—reserve one-third of the spice mix and set to one side. Add the buttermilk to bowl with spices and whisk until combined.

  • Step 2

    Transfer the buttermilk and chicken to a large Ziplock bag. Close the bag and shake then massage the chicken for a few minutes. Place into the refrigerator and marinate for at least 4 hours or overnight.

  • Step 3

    In 3 large bowls, place flour, eggs, and cornflakes. Divide remaining spice mix evenly between each bowl then stir to combine.

  • Step 4

    Remove chicken from marinade and shake off excess. Dip in flour, eggs, then cornflakes and place onto Bake Tray. Repeat for all chicken then spray with cooking spray. Slide the tray into Level 2. 

  • Step 5

    Place the potatoes, corn, onion, milk and sea salt into the Combi Pan and stir to combine. Slide the pan into Level 1.

  • Step 6

    Close door and flip the SmartSwitch to COMBI COOKER. Select COMBI MEALS, set temperature to 190°C and set time to 15 minutes. Press START/STOP to begin cooking (the unit will steam for 11 minutes before cooking). 

  • Step 7

    Halfway through cooking flip chicken. Once cooking is complete, remove tray and pan. Allow chicken to rest for 5 minutes. 

  • Step 8

    Using a silicone potato masher mash the potatoes until smooth then stir in the remaining ingredients.  

  • Step 9

    Drizzle honey over the chicken then serve immediately with mashed potatoes.
