Chicken Tikka Masala
A easy recipe for Chicken Tikka Masala. Serve with Rice, Naan or Chappati.

For the chicken
- 2 tsp ground cumin
- 1 1/2 tsp ground coriander
- 3/4 tsp red chilli powder
- 3/4 tsp ground turmeric
- 4 cloves garlic, crushed
- 1 tsp crushed ginger
- 250ml plain yoghurt
- 2 tbsp lemon juice
- salt
- 2lb chicken breast, skin removed, cut into chunks
For the masala
- 2 tbsp ghee or veg oil
- 1 small onion, sliced finely
- 2 cloves garlic, crushed
- 1 tsp ginger, crushed
- 250g tinned chopped tomatoes, blended
- 100ml double cream
- Handful coriander, chopped

Step 1
Combine Cumin, Coriander, Chilli, Turmeric, Garlic, Ginger, Yoghurt, Lemon and Salt in a bowl.

Whisk to combine.

Pour marinade all over chicken and mix using your hands. Set aside for 20 minutes.

Heat Ghee in a pot. Add Onions, and cook till golden brown. About 10 minutes. Add Garlic and Ginger and cook for 2 minutes.

Add chopped Tomatoes and cook covered on low for 8 – 10 minutes.

Puree the Onion and tomatoes mixture by transferring to the blender.

Line an oven tray with foil and add marinaded chicken. Place under the Grill and cook for 10 – 15 minutes. Add tomato back to pot, stir in Chicken. Stir in Cream.

Top with Coriander. Season to taste with salt.
