Ingredients

  • 35g vegan chocolate protein powder
  • 2 heaped tbsp flour
  • 2 whole eggs
  • 1 small banana
  • 1/2 tsp baking powder
  • Pinch salt
  • For cooking coconut oil

For the sauce

  • 2 tbsp almond butter
  • 1 heaped tbsp honey
  • Pinch cinnamon
  • Pinch nutmeg
  • Pinch ground ginger
  • Splash strong brewed coffee

Method

  • Step 1

    Add all of the pancake ingredients into your Ninja Blender and blitz to form a smooth batter

  • Step 2

    Heat a little coconut oil in a non stick frying pan and bring to a medium heat. Pour in a little of your pancake mixture and cook until bubbles start to appear on the surface, then flip and cook on the other side

  • Step 3

    Repeat this for the rest of the mixture

  • Step 4

    For the sauce, mix together the almond butter, honey and spices. Then gradually drizzle in a splash of coffee whilst mixing to create a nice, pourable consistency

  • Step 5

    Serve the pancakes with some fresh fruit and a generous drizzle of the sauce.
