Coronation Chicken

This is an delicious updated healthy version of coronation chicken.

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

  • 4 x 150g chicken breasts
  • 1 tbsp oil
  • 2 tsp curry paste
  • 300g Greek yogurt
  • 6 tbsp mayonnaise
  • 1 tsp madras curry paste
  • 2 tbsp mango chutney
  • 50g dried apricots, chopped
  • 100g pomegranate seeds
  • 100g toasted pistachio nuts
  • 25g flat leaf parsley, chopped, reserve some leaves to garnish
  • Salt and freshly ground black pepper

Utensils

  • Step 1

    Brush chicken breasts with oil and curry paste.

  • Step 2

    Insert a crisper plate in Zone 1 drawer. Add chicken to Zone 1 drawer and insert into unit. Select Zone 1, turn the dial to select AIR FRY, set temperature to 200°C and set time to 16 minutes. Press the dial to begin cooking. Cooking is complete when the internal temperature reaches at least 75°C on an instant read thermometer.

  • Step 3

    Remove chicken from drawer and cut into chunks. Allow to cool.

  • Step 4

    In a small bowl, mix yogurt, mayonnaise, curry paste, chutney, apricot, pomegranate, pistachio seeds. Season to taste.

  • Step 5

    Delicious as a salad and can be used as a sandwich filler or served as a topping for a jacket potato.
