Utensils
Step 1
Place a sieve over a bowl, then place the gratedcourgettes intothe sieve.Sprinkle with salt and leave for 30 minutes. Then rinsecourgettes and squeeze out excess moisture by hand.
Step 2
In a large bowl, add gratedcourgettes, sweetcorn,flour, baking powder, cumin, paprika,egg, salt and pepper. Stir together untila thick batter is formed and set aside.
Step 3
To install the grill plate, position it flat on top of the heating element and gently press down until it sits into place. Place the Crisper Basket on grill, then close the lid.
Step 4
Turn dial to AIR FRY. Set the temperature to 200°C and set time to 13 minutes. Select START/STOP to begin preheating (preheating will take approx. 3 minutes).
Step 5
While the unit is preheating,make the yogurt dressing. In a small bowl, add mint yogurt dressing ingredients in the order listed. Stir together until mixed and set aside.
Step 6
When unit beeps to signify it is preheated and ADD FOOD is displayed, open lid and spray or brush cooking basket with oil. Carefully spoon heaped fritter batterevenly spaced onto Crisper Basket. Press fritter down slightly to flatten. Close lid to begin cooking.
Step 7
When unit beeps and the display reads FLIP, open lid and use silicone-tipped tongs or a spatula to turn fritters. Close lid to continue cooking.
Step 8
When cooking is complete, open lid and serve fritters with yogurt dressing.
