Gingerbread Truffle Balls

If you’re looking for a simple festive sweet treat to snack on, these Gingerbread Truffle Balls are something you have to make! The truffle balls contain medjool dates, almonds and oats for plantbased goodness and are flavoured with ground ginger and mixed spice for a delicious warmth and festive vibe.

Cooking mode

  • 8 medjool dates
  • 80g almonds
  • 30g oats
  • 1 tsp ground ginger
  • 1/2 tsp ground mixed spice
  • 1 tbsp coconut oil
  • 2 tbsp maple syrup
  • 50g dark chocolate

Utensils

  • Step 1

    Add the almonds to your food processor and blitz until ground down into a flour-like consistency. Add the oats and blend again until a flour forms.

  • Step 2

    Pit the dates and add to your blender along with all the other ingredients. Blend on a high setting until everything is well combined into a sticky mixture that holds together well.

  • Step 3

    Using your hands, roll the mixture into balls and place on a tray.

  • Step 4

    Gently melt your chocolate in a bain-marie.

  • Step 5

    Drizzle the chocolate over the truffle balls.

  • Step 6

    Place into the fridge to set for 2 hours.
