Step 1
Pre-heat your Ninja Foodi Multi-Cooker on the ‘Sear/Sauté’ setting on high for 2 minutes. Add your coconut oil and butter and melt until bubbling. Stir in your popcorn kernels and coat evenly using a silicone spatula cooking for around no more than 30 seconds
Step 2
Place the pressure cooker lid on top, do not lock as this will make the pressure build up too quickly and burn the popcorn. It will take a couple of minutes before the kernels start to pop so listen out carefully. Once the popping begins to slow to every 3 seconds turn off the unit and leave for 1 minute or so until the popping stops. Carefully remove the lid and decant the popcorn into a large bowl
Step 3
Give your Foodi bowl a quick rinse and dry, place back into the unit then add the butter. Select the ‘Sear/Sauté’ setting on low and let the butter melt a little. Add all of the seasoning ingredients, except for the grated Parmesan and fresh basil. Cook, stirring frequently, until the butter has melted and all of the ingredients are fully incorporated
Step 4
Turn off the unit and stir back in your popcorn, coating fully in the seasoning. Sprinkle over the grated Parmesan and fresh basil and stir once more until evenly distributed. Serve immediately and enjoy!
