Halloumi & Watermelon Salad

This is such a delicious summery salad. It pairs really well as a side dish with a barbeque and a few cocktails!

Cooking mode

  • 225g halloumi
  • 60g rocket
  • 250g watermelon
  • 5 mint leaves
  • 1 tbsp balsamic vinegar
  • 1/2 tbsp oil
  • A pinch salt and pepper

Utensils

  • Step 1

    Line the foodi air fryer basket with greaseproof paper

  • Step 2

    Cut the halloumi in half lengthways, then cut each half into 1cm slices

  • Step 3

    Place in the air fryer basket, cook for 12 minutes using the air crisp option on 200oc, flipping the halloumi pieces half way through

  • Step 4

    Chop the watermelon into 1 inch cubes and the mint leaves into thin strips

  • Step 5

    Add the watermelon and mint to a salad bowl with the brick

  • Step 6

    Mix the balsamic vinegar, oil, salt and pepper together

  • Step 7

    Drizzle it over the salad and combine

  • Step 8

    Top with the air-fried halloumi and serve straight away
