Ingredients

  • 4 x 175g chicken breasts, butterflied
  • 1 tbsp Jerk seasoning
  • 2 red chillis, seeds removed, finely sliced
  • 3 ½ crushed garlic cloves, divided
  • 5cm piece ginger, finely sliced
  • 1 small bunch coriander, stalks and leaves divided, finely chopped
  • 1 tbsp brown sugar
  • 2 limes, zest and juice divided
  • 2 tbsp soy sauce
  • 4 tbsp sunflower oil, divided
  • 2 small carrots, peeled, julienned
  • ½ small white cabbage, finely sliced
  • 25g yogurt
  • 25g mayonnaise
  • Salt, as desired
  • 1 x 227g tin pineapple slices
  • Pinch dried chili flakes
  • Ciabatta loaf, halved

Method

  • Step 1

    Place chicken in a shallow dish. In a small bowl combine Jerk seasoning, red chillis, 3 crushed garlic cloves, sliced ginger, coriander stalks, brown sugar, 1 tablespoon sunflower oil and zest and juice of 1 lime. Pour the marinade over the chicken making sure it is well coated, cover and refrigerate for a minimum of 4 hours. 

  • Step 2

    In a large bowl mix the mayonnaise, yogurt, ½ small garlic clove, juice and zest of 1 lime. Season with salt and mix well. Add the julienned carrots, sliced cabbage, and chopped coriander leaves and mix together, making sure everything is coated in the dressing.  

  • Step 3

    To install the flat plate, position it flat on top of the heating element and gently press down until it sits into place. Close the lid.  

  • Step 4

    Turn dial to GRILL, set temperature to MEDIUM, and set time to 12 minutes. Select START/STOP to begin preheating (preheating will take approx. 6 minutes) 

  • Step 5

    Remove the chicken from marinade. When unit beeps to signify it has preheated and ADD FOOD is displayed, open lid. Add 2 tablespoons of sunflower oil and place chicken on the griddle. Close lid and cook for approx. 10 minutes, turning after 5 minutes. Once chicken is fully cooked, transfer to a chopping board and rest for 2 minutes. 

  • Step 6

    Add the pineapple to the flat plate. Sprinkle with chili flakes and cook for 1 min flipping once. Remove from flat plate to chopping board. 

  • Step 7

    Brush the inside of the ciabatta loaf with the remaining 1 tablespoon of sunflower oil and place face down on flat plate and cook for 1 minute, until slightly crispy. If time is running low, use the up arrow on the right side of the display to add more time. Meanwhile, slice the chicken and cut the pineapple into bite-sized chunks. 

  • Step 8

    Remove ciabatta from flat plate and place on a plate or serving platter. Layer each half with coleslaw, pineapple slices and sliced chicken and top with the second slice of ciabatta, slice to serve.
