Kimchi Burgers

Ingredients

  • 500g good quality minced beef
  • 1 small onion, peeled, finely chopped
  • 1 small egg, beaten
  • 5 tsp gochujang chilli paste, divided
  • 1 tsp dried mixed herbs
  • sea salt, as desired
  • ground black pepper, as desired
  • 3 tbsp Korean BBQ sauce
  • 4 burger buns, cut in half
  • 100ml mayonaise
  • 1 tsp maple syrup
  • 250g kimchi, drained
  • 1 baby gem lettuce
  • 3 sliced spring onions
  • 2 tbsp sesame seeds

Method

  • Step 1

    In a large bowl, add the beef, onion, egg, gochujang, herbs, salt, and pepper and mix until fully combined. Using wet hands, separate minced beef into 4 equal portions.

  • Step 3

    To install the grill plate, slide it into the front of the base so it hooks in, then press down on the back until it clicks into place. Plug probe into unit.

  • Step 4

    Select GRILL, the unit will default to HI, this is the correct temperature setting for this recipe. Select PRESET. The unit will default to BEEF. Then select COOK LEVEL and use the dial to set well done.

  • Step 5

    Press dial to begin preheating (preheating will take approx. 6 minutes). When unit beeps to signify it has preheated, open lid and insert probe horizontally into the centre of one of the patties.

  • Step 6

    Use a silicone-tipped spatula to add the burgers to the grill. Firmly press each burger down for 5 seconds. Brush with Korean BBQ sauce. Close lid. When unit beeps and the display reads FLIP, open lid, flip the burgers and brush with more sauce. Close lid.

  • Step 7

    When cooking is complete, remove the burgers. Add the burger buns to the grill and close lid. Turn dial to GRILL, set temperature to HI, set time to 2 minutes. Skip preheat by pressing the PREHEAT BUTTON.

  • Step 8

    Once toasted, remove the buns. In a small bowl, mix the mayonnaise, gochujang chili paste, and maple syrup. Divide the chilli mayonnaise between the toasted burger buns.

  • Step 9

    Then add lettuce, burger, and kimchi. Sprinkle with spring onions and sesame seeds and serve hot.
