Leek & Potato Soup

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

  • 3 tbsp Butter
  • 1 tbsp Oil
  • 2 large Leeks, Sliced
  • 1 small Onion, Diced
  • 2 Garlic Cloves, finely sliced
  • 3 small Potatoes, Peeled and cubed
  • 1l Chicken or Vegetable Stock
  • 100ml Milk
  • 150ml Double Cream
  • Salt and Pepper

Utensils

  • Step 1

    Select Saute function.

  • Step 2

    Once ready, add butter and Oil.

  • Step 3

    Add the Leeks, Onions and Garlic.

  • Step 4

    Saute on low for 3 minutes.

  • Step 5

    Add the Potatoes and saute for a further 6 – 7 minutes. Add a few tablespoons of water if needed.

  • Step 6

    Add the Stock and Milk and put the pressure cooker lid on.

  • Step 7

    Set the vent to seal.

  • Step 8

    Pressure Cook on high for 6 minutes, then do a Quick Release by carefully turning the valve.

  • Step 9

    Drizzle in the Cream, taste and season.

  • Step 10

    Blend the soup, using a hand blender.
