Mango Lime Loaf Cake

This delicious, decadent and moist Mango Lime Loaf Cake is bursting with flavour and is ready to eat in under an hour.

For the cake

  • 115g Butter
  • 115g Caster Sugar
  • 3 Eggs
  • 190g Mango Pulp
  • 190g Self Raising Flour
  • 2 Limes, Zest only
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 3 tbsp Greek Yoghurt

For the mango icing

  • 2 tbsp Mango Pulp
  • 1/2 Juice of Lime
  • 1 Zest of Lime
  • 150g Icing Sugar

Utensils

  • Step 1

    Add the Butter and Sugar to a bowl and beat till creamy for around 5 minutes.

  • Step 2

    Add the Eggs one at a time, beating after each addition until fully incorporated.

  • Step 3

    Add the Mango Pulp and beat together.

  • Step 4

    Sieve in the Self Raising Flour and fold in along with the Lime Zest.

  • Step 5

    Add the Baking Powder, Salt and Yoghurt and gently mix through.

  • Step 6

    Line a loaf tin with greaseproof paper or a loaf liner or use a rectangular metal takeaway container.

  • Step 7

    Add the Cake batter and level out.

  • Step 8

    Preheat the Ninja Foodi max Health Grill & Air Fryer.

  • Step 9

    Set to 150C and bake for 40 minutes.

  • Step 10

    Once it is ready, place the loaf tin in the centre and leave to bake.

  • Step 11

    Check that the cake is baked through by inserting a skewer into the middle and ensuring that is comes out clean.

  • Step 12

    Meanwhile make the icing by mixing the Mango Pulp, Lime Zest, Juice and Sugar together in a bowl.

  • Step 13

    Leave the cake in the tin until it is cool before removing. Once cool, pour over the icing.
