Mint Chocolate Sorbet

TIP: Save a few small mint leaves in a bowl of cold water for serving. Serve topped with shards of chocolate and a mint leaf or two for a retro vibe.

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

  • 100g caster sugar
  • 400ml water
  • 1 1/2 tsp peppermint extract
  • 50g dark chocolate
  • Leaves from 4 large mint sprigs

Utensils

  • Step 1

    Heat sugar and water in a small saucepan until sugar is dissolved. Stir in peppermint extract then pour mixture into empty tub. Place tub into an ice bath

  • Step 2

    Once cooled, place lid on tub and freeze for 24 hours

  • Step 3

    While sorbet base freezes, line baking tray with baking parchment

  • Step 4

    Melt chocolate in microwave in 5-second bursts, stirring in between. Pour onto lined tray then spread thinly with a spatula and cool completely. Once cooled, break chocolate into pieces and store in an airtight container if not using immediately

  • Step 5

    Remove tub from freezer, remove lid, then place tub in outer bowl. Install paddle into outer bowl lid and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place

  • Step 6

    Select SORBET

  • Step 7

    With a spoon, create a 4cm wide hole that reaches the bottom of the tub. Finely chop mint leaves then put into hole with chocolate pieces and process again using MIX-IN program

  • Step 8

    Once processing is complete, remove sorbet from tub and serve immediately
