Mushroom Stroganoff

Dinner on the table in under 30 minutes. This hearty winter warming dish is full of flavour and will be loved by all.

Cooking mode

  • 1 tbsp extra virgin olive oil
  • 1 white onion (finely diced)
  • 3 garlic cloves (crushed)
  • 680g mixed mushrooms (sliced)
  • 100ml oat cream
  • 400ml vegetable stock
  • 2 tbsp soy sauce
  • 1/2 tsp smoked paprika
  • 2 pinches of pepper
  • 1 tbsp nutritional yeast
  • 1 tbsp cornflour and 2 tbsp or water combined
  • 1 tbsp chopped fresh parsley
  • wild rice to serve

    In a pan on a medium heat add the oil along with the diced onion.

  • Step 2

    After a few minutes add the garlic and sliced mushrooms and cook for 10 minutes stirring occasionally.

  • Step 3

    In the ninja blender add the vegetable stock, oat cream, soy sauce, smoked paprika, pepper and nutritional yeast. Blend for a few seconds until combined and then pour into the pan with the mushrooms.

  • Step 4

    Add the cornflour combined with the water to the pan to thicken the sauce. Leave the stroganoff to cook for 5 minutes more before serving with wild rice and garnishing with the chopped fresh parsley.
