Papaya, Lime & Chilli Sorbet

TIP: Add up to 1 teaspoon of dried chilli flakes if you like things hot. 


  • 50g caster sugar
  • 50g golden syrup
  • 1 tablespoon water
  • 300g peeled, ripe papaya, deseeded and diced into 1–2cm chunks
  • Zest and juice of 2 limes
  • 1/2 teaspoon dried chilli flakes
  • Pinch sea salt

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!


  • Step 1

    Cook the sugargolden syrup and water in a small saucepan over medium heat, stirring for 12 minutes, or until sugar has dissolved.  

  • Step 2

    Add diced papaya, lime zest and juice, chilli and salt to the warm syrup. Stir gently with spatula until evenly combined.

  • Step 3

    Transfer mixture to empty tub. Place lid on tub and freeze for 24 hours. 

  • Step 4

    Remove tub from freezer and remove lid from tub. Place tub in outer bowl, install paddle onto outer bowl lid, and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place. 

  • Step 5

    Select SORBET.

  • Step 6

    Once processing is complete, add mix-ins or remove sorbet from tub and serve immediately.
