Pumpkin Pasta

For the pasta
- 1 Hokkaido Pumpkin
- 1 Onion
- 1 Garlic clove
- 40g cashews
- 1 tsp salt and pepper
- 1 tsp oil
- 200g pasta
For the garnish
- spring onions
- pumpkin seeds
Utensils

Step 1
Preheat the oven to 160 degrees

Quarter the pumpkin and remove the seeds

Add to a baking sheet and season the Pumpkin with salt, pepper and olive oil

Add Onion, garlic and cashews

Bake for 40 minutes

In the meantime, cook your pasta of choice in 150ml of water

Once the pumpkin is roasted, transfer everything to a blender and season again with salt and pepper.

Serve with pasta and enjoy this beautiful and healthy vegan pasta dish.
