Roasted Mediterranean Vegetables with Orange Glaze & Feta Cheese

If you prefer your veggies crispier, select AIR FRY and set temperature to 200˚C, set time to 5-10 minutes. Press START/STOP to begin cooking. Check towards end cook time if they are crisp enough. The unit will automatically pause when the lid is opened.

Cooking mode

  • 650g mixed vegetables, (peppers, onions, courgettes, sweet potatoes), cut into 4cm pieces
  • 2 tablespoons olive oil
  • Zest and juice of 1 orange, divided
  • 1 tablespoon fresh thyme leaves
  • NADA Salt and freshly ground black pepper
  • 250ml water
  • 2 tablespoons honey, orange blossom if desired
  • 200g feta cheese, crumbled
  • 2 tablespoons olive oil

  • Step 1

    In a large bowl, add vegetables, oil, orange zest, thyme leaves and season to taste. Toss together to make sure all the vegetables are coated.

    Pour water into the pot. Push in the legs on the Crisper Plate, then place the plate in the bottom position in the pot. Add vegetables.

  • Step 3

    Close the lid and flip the SmartSwitch to RAPID COOKER. Select STEAM AIR FRY, set temperature 200˚C and set time to 20 minutes. Select START/STOP to begin cooking, (the unit will STEAM for approximately 10 minutes, before countdown timer begins).

  • Step 4

    Meanwhile, whisk orange juice and honey together. When cooking is complete, remove vegetables from plate. Place vegetables into a serving dish and drizzle over the glaze and sprinkle with feta cheese. Serve with fish or chicken or with jacket potatoes.
