Roasted Potato & Bean Salad

Ingredients

  • 6-8 potatoes
  • 1 tbsp olive oil
  • Handful frozen princess beans
  • 1 red onion
  • 3-4 garlic cloves
  • 100ml vegetable stock
  • pepper/ salt
  • mixed salad
  • 1-2 tbsp breadcrumbs
  • potato spice of your choosing
  • fat for frying
  • vinaigrette (optional)

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

Method

  • Step 1

    Wash potatoes & halve them. In a Bowl with 1 tbsp olive oil & 1 tbsp bread crumbs and smash 2 garlic gloves-. Spice with salt & potato spice.

  • Step 2

    Put it in the Ninja Foodi MAX OP500EU for 25 min, at 190° C on, Bake”.

  • Step 3

    In the meantime, chop onions & garlic. Remove finished potatoes from the multicooker.

  • Step 4

    Sauté onions & garlic in the still hot OP500EU on Sauté “MID”. Add frozen beans & stock. Simmer for about 5 minutes. Season with salt & pepper.

  • Step 5

    Arrange mixed salad with beans & potatoes in a bowl. Add the rest of the broth of the beans (and vinaigrette if using) over the salad & enjoy with bread.
