This Chicken Corn Chowder is the perfect slow cooker meal to satisfy your mid week cravings. This chicken recipe can feed the whole family and it tastes amazing!

Step 1
In a cooking pot of your Ninja Foodi Multi-Cooker, select the sear/sauté option, add the bacon and fry until crispy – usually about 5 minutes. Remove the bacon once crispy
Step 2
Add the diced onion, garlic and 2 tbsp of olive oil, sauté for 2-3 min until golden brown but not burned. Add 2 tbsp of flour, mix well
Step 3
Add all the vegetables to the cooking pot along with the stock, salt, pepper and chicken
Step 4
Cover with the lid, set the time for 3hours on the Slow Cook setting, high heat
Step 5
When the time has finished, add 1/2 cup of single cream, mix well until combined
Step 6
Use potato masher to break down the potatoes and the chicken (by now chicken should be falling apart easily). Optional – you can remove 1 cup of the soup, allow to cool and add to a blender. Blend until smooth and mix with the soup to thicken it
Step 7
Serve with the fried bacon, some fresh herbs, chives and cheese if you desire
