Slow Cooked Lamb with Layered Vegetables

TIP  For speed, use a food processor or mandolin to thinly slice vegetables.

INGREDIENTS

  • 600g potatoes, peeled and finely sliced
  • 300g sweet potatoes, peeled and finely sliced
  • 2 onions, finely sliced
  • 3 carrots, sliced
  • 2 garlic cloves, crushed
  • 2-3 thyme sprigs
  • Salt and freshly ground black pepper
  • 500ml chicken or vegetable stock
  • 1.5kg half shoulder of lamb

Utensils

  • Step 1

    Preheat the oven to 160°C.

  • Step 2

    Layer vegetables, garlic, thyme and seasoning into the bottom of the Ninja Possible pot. Pour over chicken or vegetable stock. Place lamb on top. Season to taste. Cover with lid.

  • Step 3

    Put pot in the preheated oven. After 1½ hours, carefully remove lid from pot and put pot back in the oven. Cook for another 1½ hours or until lamb is cooked.

  • Step 4

    Serve hot with green vegetables.
