Small Batch Blender Coconut & Dark Chocolate Cookies

Cooking mode
When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!
- 30g dairy free butter
- 25g light brown sugar
- 20g caster sugar
- 50g plainflour
- 1/2 tsp baking powder
- 15g desiccated coconut plus more for on top
- 15g oats
- 15ml dairy free milk
- 30g grated dark chocolate
Utensils

Step 1
Begin by placing the butter, sugars, flour, baking powder, desiccated coconut, oats and milk into the blender and use the mix function for 10 seconds to combine the ingredients.

Empty the mixture into a bowl and fold through 20g of the grated chocolate.

Roll into 4 balls and place them spread out onto a lined baking tray. Push them down gently and place the tray into the freezer whilst the oven preheats at 180c.

Once the oven is hot (after approx.15 minutes) place the cookies into the oven and bake for 12 minutes.

Allow to harden for a few minutes and add the remaining grated chocolate and extra coconut. Enjoy.
