Spiced Pineapple Galette with Rum Caramel

Pineapple and Rum are a match made in heaven. And when you add caramel to the mix it takes it to the next level. This is the perfect sharing dessert that is packed with flavour.

Cooking mode

  • 170g plain flour
  • Pinch salt
  • 80g dairy free butter
  • 3 1/2 tbsp ice cold water
  • 400g diced pineapple
  • 2 tbsp maple syrup
  • 1/2 tsp corn starch
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 2 tbsp caster sugar

For the rum caramel

  • 8 tbsp Red Leg Spiced Rum
  • 160g light brown sugar
  • 2 tbsp melted butter
  • 200ml full fat coconut milk
  • 1 tbsp maple syrup

To serve

  • Dairy free vanilla ice cream

Utensils

  • Step 1

    In a large bowl combine the plain flour and salt

  • Step 2

    Next add the butter and using your fingers combine until a crumbly mixture forms

  • Step 3

    Add 1 tablespoon of ice-cold water at a time and combine until a ball of dough is formed. If the mixture seems too sticky add a little bit more flour

  • Step 4

    Wrap the ball of dough in cling film or keep it covered and place it in the fridge for half an hour

  • Step 5

    Meanwhile prepare the pineapple. In a pan on a medium heat add the maple syrup, corn starch, vanilla extract and cinnamon. Combine before adding the diced pineapple

    Let simmer for 10 minutes stirring occasionally before leaving to one side to cool down

    Preheat oven to 180c and line a baking tray with parchment paper

  • Step 8

    Sprinkle some flour onto your work surface and using a rolling pin roll out the dough to around the size of a dinner plate

  • Step 9

    Add the pineapple chunks to the centre of the dough leaving a couple of centimetres around the edge

  • Step 10

    Then fold the dough inwards pinching it into place at each fold. Brush with some more maple syrup and place into the oven for 45 minutes

    To prepare the caramel add the rum, melted butter, coconut milk and maple syrup to the blender and blend for a few seconds until combined

  • Step 12

    Empty into a saucepan on a high heat and add the brown sugar. Bring to the boil and then turn the heat down and leave to simmer, stirring frequently until your desired caramel consistency is reached

    When the galette is cooked, slice and serve with ice cream and rum caramel. Enjoy!
