Spicy Tamarind Fried Rice

Fried rice dishes are a great weekday dinner recipe and also perfect for batch cooking. Try this delicious sweet, sour and spicy take on fried rice, served with some prawn crackers.

Cooking mode

  • 240g basmati rice
  • 1 tbsp garlic oil
  • 1 tbsp frozen chopped ginger
  • 1 red chilli
  • 400g chicken breast, in strips
  • 1 red pepper
  • 2 medium carrots, peeled
  • 4 spring onions
  • 100g edamame beans
  • 2 tbsp tamarind paste
  • ½ tsp ground coriander
  • ½ tsp ground turmeric
  • ½ tsp ground cumin
  • ½ tsp black pepper
  • ¼ tsp chilli powder
  • 1 tsp sugar
  • Pinch salt
  • 2 tbsp tamari

Utensils

  • Step 1

    Cook the rice as per instructions and leave to one side

  • Step 2

    Heat the oil in the wok over a medium heat

  • Step 3

    Add the ginger and finely chopped chilli, stir-fry for 1 minute

  • Step 4

    Add the chicken strips, stir-fry for 3 minutes

  • Step 5

    Thinly slice the pepper and spring onions, add to the wok for a further 2 minutes

  • Step 6

    Add 4 tbsp of water to the wok with the edamame, spices, tamarind paste and carrot (julienne or batons)

  • Step 7

    Stir-fry for a further 4 minutes

  • Step 8

    Add the cooked rice and tamari, stir-frying until the rice is heated through

  • Step 9

    Serve with prawn crackers, tamarind sauce and topped with coriander and spring onion
