  • 4 large cooking apples
  • 100g sultanas
  • 4 tbsp coconut sugar or raw cane sugar
  • 2 tsp ground sweet cinnamon
  • 1 tsp ground mixed spice
  • 50g unsalted butter

Utensils

  • Step 1

Wash and dry the apples then core using an apple corer or melon baller to create a 3-4cm wide hole. Create a foil ‘nest’ with a lip of around 2-3cm and place a disc of baking parchment on top. Sit on top of the reversible rack in its lowest position then place the apples on top.

  • Step 2

Stir together the sultanas, coconut sugar, and spices then spoon a teaspoon of the mixture into each apple.

  • Step 3

Divide the butter into 4 equal pieces then stuff into each apple, pressing down with your fingers to pack tightly. Spoon in the remaining dried fruit mixture.

  • Step 4

Add 300ml cold water to the cooking pot then insert the reversible rack.

  • Step 5

Close the lid and move the slider to the middle position. Select STEAM BAKE, set temperature to 105°C, and set time to 5 minutes. Press START/STOP to begin, (this will STEAM for approximately 20 minutes before switching to STEAM BAKE).

  • Step 6

Once baking is complete slide the slider to the far right, open the lid and baste the apples with their juices. Close the lid.

  • Step 7

Select AIRFRY, setting the temperature to 200°C and time to 5 minutes. Open the lid and baste halfway through cooking.

  • Step 8

Serve immediately with vanilla ice cream, custard, or coconut yogurt. Be sure to spoon over the delicious cooking juices!

    Notes:

The skin can also be removed and apples and stuffing blended together for an instant apple sauce!

If cooking apples are too sour for your liking use 6 regular apples instead.
