Cooking mode

  • 500ml whole milk
  • 100g caster sugar
  • 1/2 tsp vanilla extract
  • 1 1/2 tsp cornstarch
  • 50g dark chocolate, shaved, for mix-in

Utensils

  • Step 1

    Pour three-quarters of the milk into a medium saucepan. Add sugar and vanilla then place over medium–high heat and cook, stirring occasionally, until it just reaches a simmer.

  • Step 2

    Whisk cornstarch in a small bowl with remaining milk, then pour that mixture into the saucepan. Cook for 10 minutes, whisking constantly until mixture thickens.

  • Step 3

    Remove ice cream base from heat, pour into the tub then place in an ice bath.

  • Step 4

    Once cooled, place storage lid on tub and freeze for 24 hours. 

  • Step 5

    Remove tub from freezer, remove lid, then place tub in outer bowl. Install paddle into outer bowl lid and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.

  • Step 6

    Select ICE CREAM.

  • Step 7

    Once processing is complete, use a spoon to create a 4cm-wide hole that reaches the bottom of the tub. Add chocolate shavings to the hole* and process again using the MIX-IN program.

    *It’s fine if level is above MAX FILL line.

  • Step 8

    Once processing is complete, remove ice cream from tub and serve immediately.
