Sweet Breakfast ‘Pizza’
This is the weekend breakfast recipe you need! This sweet, no-bake, breakfast pizza is the perfect brekkie to whip up when you’ve got a little more time on your hands and feel like making something a bit more fancy! Serve up with a partner for a dreamy breakfast date, make with your gal pals for a cute brunch get-together or simply make it for yourself to enjoy throughout the week.

The base
- 150g oats
- 60g almonds
- 50g raw buckwheat groats
- 3 tbsp almond butter (peanut butter will also work)
- 3 tbsp maple syrup
- 3 tbsp water
- 1 tbsp coconut oil - melted
- 1 tsp cinnamon
- 1 tsp vanilla extract
- Pinch of salt
Topping
- 100g coconut yogurt (or other thick dairy free yogurt)
- 200g mixed berries
- Small handful chopped nuts/seeds
Utensils

Step 1
Start by adding the oats, almonds and buckwheat groats into your food processor and blending until a crumply texture forms.

Add in the almond butter, maple syrup, coconut oil, cinnamon, vanilla and pinch of salt and blend again combine.

Add the water a tablespoon at a time, blending until a sticky dough-like mixture forms that holds together when you press it between your fingers.

Line a dish or pizza tray with baking paper. Press the dough down evenly to form the crust.

Place in the fridge for 30 minutes to firm up.

Once the base has firmed up it’s time to add your toppings! Get as creative as you like!
