Texan BBQ Smash Burgers

Tip: Chopped cherry tomatoes mixed with 1 tablespoon vinegar, 1 teaspoon sugar, ½ teaspoon onion seeds. Reduce on the flat grill to form a quick tomato chutney, mix though a squeeze of tomato sauce before serving.

Cooking mode

  • 1kg 20% minced beef 
  • 6-8 tsp Ninja Woodfire Texas BBQ seasoning
  • 4 teaspoons Bovril
  • 100g large chestnut mushrooms, sliced
  • 4 tsp soy sauce
  • 4 tsp Worcestershire sauce
  • 100g grated Parmesan cheese
  • 8 Slices of Emmental cheese
  • 8 burger buns 
  • Step 1

    To install the flat plate, position it flat on top of the heating element and gently press down until it sits into place, then close the lid.

  • Step 2

    While holding the smokebox lid open, use the pellet scoop to pour pellets into the smokebox until filled to the top. Then close smoke box lid.​ 

  • Step 3

    Turn dial to GRILL. Select WOODFIRE FLAVOUR. Set temperature to HI, and set time to 8 minutes. Select START/STOP to begin preheating (preheating will take approx. 10-13 minutes). 

  • Step 4

    While the unit preheats, prepare the burgers. In a large bowl, mix beef with Ninja Woodfire Texas BBQ seasoning. Separate minced beef into 8 equal balls. Shape the beef into flat, patties, approximately 6cm wide. 

  • Step 5

    When unit beeps to signify it has preheated and ADD FOOD is displayed, open lid and place burgers onto grill, gently smashing them down onto the flat grill. Brush with Bovril. Close lid to begin cooking. 

  • Step 6

    When unit beeps and the display reads FLIP, open lid and use silicone-tipped tongs to flip the burgers. Brush with more Bovril. Close lid to continue cooking. 

  • Step 7

    Meanwhile, in a small bowl, mix mushrooms with soy and Worcestershire sauce. 

  • Step 8

    When cooking is complete, transfer the burgers to a warm plate to rest. Add mushrooms to the grill cut side down and close lid. Turn dial to GRILL, set temperature to HI, and set time to 5 minutes. Select START/STOP to begin cooking. After 4 minutes remove from grill. Spoon 8 heaped mounds of Parmesan onto grill to form circlesAllow to cook until golden and brown.

    Serve burgers in bun with sliced cheese, mushrooms, topped with Parmesan disc.
