Vanilla, Gin & Raspberry Swirl Ice Cream
A perfect summer treat! Home made ice cream infused with Blackwoods Gin, ideal for a celebration or to serve at an afternoon get-together
Cooking mode
When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!
For the vanilla part
- 4 frozen bananas
- 75ml almond milk
- 4 tbsp maple syrup
- 1 tsp vanilla extract
For the raspberry part
- 200g frozen raspberries
- 3 tbsp maple syrup
- 30ml Blackwoods Gin
- 1 tbsp lemon juice
- Optional: a few mint leaves

Step 1
First make the vanilla part: Place the ingredients into your Ninja Kitchen Nutri Ninja food processor/blender and blend well for a few minutes until quite thick and completely smooth

Pour into a loaf tin lined with greaseproof paper and smooth out

Add the ingredients for the raspberry part into your food processor/blender and whizz up until smooth

Dot this mixture around then use a knife to create a swirl effect with the vanilla. Place in the freezer for at least 2 hours to set – then garnish with mint sprigs and serve!
