Vegan Key Lime Pie Gelato

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

  • 335g diced ripe avocado (about 3 ripe avocados)
  • 150ml unsweetened favourite plant-based milk
  • 80g caster sugar
  • 2 tbsp freshly squeezed lime juice
  • 1 tbsp light agave syrup
  • 1 1/2 tsp lime zest
  • Pinch of salt
  • 40g digestive biscuits, broken into large pieces, for mix-in

Utensils

  • Step 1

    Mash avocado with a fork in a large bowl. Add remaining ingredients – except for the biscuits – and stir well until fully combined and sugar is dissolved.

  • Step 2

    Transfer mixture to the empty tub. Place lid on tub and freeze for 24 hours.

  • Step 3

    Remove tub from freezer, remove lid, then place tub in outer bowl. Install paddle into outer bowl lid and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.

  • Step 4

    Select GELATO.

  • Step 5

    With a spoon, create a 4cm wide hole that reaches the bottom of the tub. Add the graham cracker pieces to the hole and process again using the MIX-IN program.

  • Step 6

    Once processing is complete, remove ice cream from tub and serve immediately.

    NOTE: During MIX-IN process, it’s okay for the ice cream to approach or touch the MAX FILL line.
