Vegan Peach & Coconut Smoothie Bowl

TIP: For a non-vegan smoothie bowl, swap coconut yogurt for same quantity of full-fat Greek yogurt.

Cooking mode

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!

  • 1/2 can (200g) peach slices in fruit juice
  • 1 tbsp maple syrup
  • 250g coconut yogurt

Toppings (optional)

  • toasted mixed seeds
  • sliced banana
  • porridge oats

Utensils

  • Step 1

    Pour the peach slices and their juice into a bowl with the maple syrup and coconut yoghurt. Stir well to combine.

  • Step 2

    Spoon mixture into empty tub. Place lid on tub and freeze for 24 hours.

  • Step 3

    Remove tub from freezer and remove lid from tub. Place tub in outer bowl, install paddle onto outer bowl lid, and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.

  • Step 4

    Select SMOOTHIE BOWL.

  • Step 5

    Once processing is complete, divide the smoothie between serving bowls. Top each portion with a spoonful of seeds, banana slices and generous sprinkling of oats, and serve immediately.
    NOTE: If your freezer is too cold, the smoothie bowl may look dry. If this occurs, run the RE-SPIN program to process the mixture a little more.
