Veggie Satay Salad

Cooking mode

  • 2 carrots (peeled and then peeled into ribbons)
  • 140g edamame beans
  • 1/4 red cabbage (thinly sliced)
  • 1 red pepper (thinly sliced)
  • A handful radishes (thinly sliced)
  • 1/2 cucumber (peeled into ribbons)
  • A handful crushed peanuts
  • 2 heaped tablespoons of smooth peanut butter
  • 1 tbsp maple syrup
  • 1 tbsp soy sauce
  • 1 Juice from lime
  • 100ml coconut milk
  • 3 spring onions (2 sliced lengthways, 1 sliced horizontally)

  • Step 1

    Begin by making the sauce. In your ninja add the smooth peanut butter, maple syrup, soy sauce, lime juice and coconut milk. Blend until smooth.

  • Step 2

    Next in a large bowl combine the carrot and cucumber ribbons, edamame beans, sliced red pepper, radishes and the spring onions sliced lengthways.

  • Step 3

    Plate up, drizzle over the satay sauce and finish by adding some crushed peanuts and the remaining spring onion on top. Enjoy!
