Red Lentil, Carrot & Coriander Fritters

Serve this delicious fritters with some sliced avocado and a poached egg for a tasty brunch or with baby potatoes and tenderstem broccoli for a nutritious dinner.

Cooking mode

  • 150g red lentils
  • 1 large carrot
  • 1 clove garlic
  • 2 tbsp plain flour
  • 2 tbsp olive oil (+ 1 tbsp for cooking)
  • 2 tbsp tahini
  • 1 tsp paprika
  • 6g fresh coriander
  • Salt & pepper

Utensils

  • Step 1

    Rinse the lentils under cold water then add to a pain with 200ml water. Simmer for around 12 minutes, or until the lentils have soaked up the water. Put to one side to cool.

  • Step 2

    Peel the carrot then grate and add to your food processor along with the lentils and remaining ingredients.

  • Step 3

    Pulse until the mixture has broken down and is well combined, but isn’t pureed.

  • Step 4

    Add 1tbsp olive oil to a frying pan over a medium heat and allow to warm.

  • Step 5

    Form the mixture into fritter shapes and place in the frying pan.

  • Step 6

    Cook for 3-4 minutes before flipping and cook for a further 3-4 minutes on the other side.

  • Step 7

    Eat immediately or keep in the fridge to consume within 3 days.
