Berry Meringue Blondie Cake

Cooking mode

  • 100g almond or cashew butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 100g gluten-free flour
  • 100g ground almonds
  • 100g sweetener
  • 1 tsp baking powder
  • 75g frozen mixed berries
  • 4 meringues, broken up into small pieces
  • Melted white chocolate to drizzle

Utensils

  • Step 1

    Preheat the oven to 180C and grease and line a 20cm round tin.

  • Step 2

    Place the nut butter, eggs and vanilla into your Ninja Kitchen Nutri Ninja food processor and whizz up until smooth.

  • Step 3

    Add in the flour, ground almonds, sweetener and baking powder and blend again until combined. 

  • Step 4

    Gently stir in the mixed berries and broken up meringue pieces then spoon into the tin and spread out evenly. Bake for 25-30 minutes until firmed up then leave to cool.

  • Step 5

    Pop out of the tin then slice into 8-10 pieces. Drizzle with melted white chocolate, then enjoy!
