Chocolate Cookie Dough Balls

For the blondie
- 1 x can butter beans or chickpeas
- 4 tbsp smooth nut butter
- 4 tbsp maple syrup
- 200ml almond milk
- 1 tsp vanilla extract
- 100g gluten-free flour
- 75g ground almonds
- 75g coconut sugar
- 2 scoops vegan protein powder (or sub for ground almonds/flour)
- 1 tsp baking powder
- 50g dark chocolate pieces
For the chocolate balls
- 100g oats
- 4 tbsp cocoa powder
- 4 tbsp nut butter
- 4 tbsp maple syrup
- 50g dark chocolate pieces
- Melted dark chocolate to decorate

Step 1
Preheat the oven to 180C and grease and line a 9x9in baking tin.

Place the butter beans, nut butter, maple syrup, milk and vanilla into your Ninja Kitchen Nutri Ninja food processor and whizz up until smooth.

Add in the flour, almonds, sugar, protein powder and baking powder then blend again until a smooth, thick batter has formed. Spread into the tin.

Mix together the oats, cocoa powder, nut butter and syrup until the mixture comes together then add in the chocolate pieces. Divide into 16 small pieces and roll into balls.

Add on top of the blondie mixture then scatter over the remaining chocolate pieces. Bake for 25-30 minutes until firm and golden. Leave to cool then cut into 8 bars and drizzle with dark chocolate. Enjoy!
