Protein Carrot cake

When entering cooking mode - We will enable your screen to stay ‘always on’ to avoid any unnecessary interruptions whilst you cook!
- 300g carrot pulp (or grated carrots)
- 1/3 tsp nutmeg
- 2 tbsp cinnamon
- 75g oats
- 30g stevia
- 55g vanilla protein powder
- 2 egg whites
For the topping
- 250g Fat free Skyr
- 30ml maple syrup
- crushed walnuts (optional)

Step 1
Using the bowl of your Ninja food processor and the plastic dough blade, add all of the cake mixture ingredients (not the topping ingredients), select low for approximately 45-60 seconds to allow the mixture to combine thoroughly.

Transfer the mixture to a baking tray lined with greaseproof paper, pour the cake batter in the tray and press down to flatten it out.

Pre-heat your Ninja Mini Oven to 175C degree (if you are using a conventional oven, preheat at the beginning. Place the cake in the oven and bake for approximately 20-25 minutes.

In a mixing bowl, pour in the Skyr and the maple syrup and mix together – place back in the fridge to set.

Once the cake has finished baking, allow it to cool fully, the add the Skyr frosting, and sprinkle with pieces of walnuts.
