Walnut Pesto Tofu

A delicious vegan side or main dish made in under 15 minutes. The tofu can be grilled on the BBQ or simply heated in a pan while you prepare your speedy walnut pesto.

Cooking mode

  • 1 extra-largeblock of firm tofu
  • 100g walnuts
  • 1 Juice of lemon
  • 30g fresh basil leaves
  • 30g dairy free parmesan
  • 70ml extra virgin olive oil
  • 1 clove of garlic (crushed)
  • Pinch of black pepper
  • Pinch of salt

Utensils

  • Step 1

    Begin by slicing the tofu into 1cm thick strips and then slicing the strips in half diagonally into triangle shapes. If using a hob add a drizzle of oil of choice to a griddle or standard pan and once hot place the tofu slices in. Cook for a few minutes on each side. If using a BBQ spray the grills with some oil and cook the tofu the same way as above.

  • Step 2

    Whilst the tofu is cooking prepare the walnut pesto by adding all the ingredients in the blender, and blend until your desired pesto texture is reached.

  • Step 3

    Plate up the tofu and add the walnut pesto on top. Enjoy with some other side dishes such as potatoes and salad.
