Grilled Sea Bass with Spicy Coconut Dressing
Packed with plenty of flavour and spice this Grilled Sea Bass with Spicy Coconut Dressing makes a great light lunch. Ready in less than 10 minutes it’s perfect for a summer garden party.

For the spicy coconut dressing
- 2 tbsp coconut oil
- 1 clove garlic (crushed)
- 2 green chillies (finely chopped)
- 6 tbsp water
- 4 tbsp coconut cream
- 1 tbsp agave nectar
- 1 tsp ginger paste
- Pinch sea salt
- 2 tbsp lime juice
- 1 tbsp fresh mint leaves (finely chopped)
For the grilled seabass
- 2 x 180g sea bass fillets
- 2 tsp sesame oil
- Sea salt
- Ground black pepper

Step 1
To make the dressing heat the coconut oil in a pan over a high heat, fry the garlic until golden brown (about 1 minute). Add the remaining ingredients except for mint and lime juice, stir well then remove from heat and add the chopped mint and lime juice. Set to one side.

Drizzle or brush the sesame oil over the sea bass then sprinkle over some sea salt and ground black pepper.

Insert the grill plate into the cooking pot. Select GRILL, set the temperature to HI, and cooking time to 3 minutes.

Grill the sea bass skin-side down for 2 minutes then flip and cook for a further 1 minute. Serve immediately with the pre-made dressing, rice and steamed green vegetables.
Tip:
Leave the membrane and seeds in the chillies for heat or remove some/all for a milder flavour.
